Sara's Rhubarb Cake
Wash and chop 4-5 cups of Rhubard ( stalks about 1/2" in diameter). Place into a bowl and add 1 1/2 cups sugar. Leave 1 hour to macerate . Prepare a white cake mix, as directed on the box. Pour into 9x13 greased pan. Dump Rhubarb goop over the top of the cake mix. Pour 1 cup heavy cream over all. Bake 350˚ for about 55 minutes until set in center.
Darleen's Fruit Salsa with Cinnamon Chips
1 cup finely chopped fresh strawberries
1 medium navel orange, peeled and finely chopped
3 medium kiwi fruit, peeled and finely chopped
1 ( 8 ounces) can unsweetened crushed pineapple, well drained
1 1/2 teaspoons sugar
1 tablespoon lemon juice
Mix all together, cover and refrigerate until serving. The fruit seems to continue to make more juice all the time, so use a large enough bowl to prevent messes.
Cinnamon Chips
10 flour tortillas (8 inches)
1/4 cup butter, melted
/3 cup sugar
1 teaspoon ground cinnamon
Preheat oven to 350 ˚. Mix sugar and cinnamon in bowl. Melt butter and brush over tortillas. Sprinkle with sugar/cinnamon mixture and cut into 8th's with pizza cutter. Place on UNGREASED cookie sheet and bake for 5-10 minutes at 350˚. Cool on rack.
Serve salsa with chips.
Note, my chips seemed to bake better at 375˚. But watch closely or they will burn.
